A chemistry professor decided to teach his students a different lesson one day. Holding a glass of water in his hand, he asked the students, “How much do you think this glass of water weighs?” “500 grams!” came a voice from the back. “600,” said another student. “I don’t really know!” said the professor, holding the glass up to make sure everyone could see it. “And unless we weigh it, we won’t know.” With the glass still in his outstretched hand, the professor continued, “What will happen if I hold it like this for a few minutes?”

Cream of Broccoli Soup

A personal favorite of mine, this broccoli soup recipe is vegetarian, healthy, quick, and easy.  This simple Cream of Broccoli Soup is from Shobha Indani’s cookbook ‘Swad Sugandh’, serves 6.


Vegetarian Cream of Broccoli Soup

What you need to make vegetarian broccoli soup:

For Stock:
For Soup:
2 Tbsp butter
1 cup milk
¼ cup chopped onion
1 pinch nutmeg powder
1 tsp chopped garlic
1 tsp oregano
1 Tbsp chopped celery
½ cup fresh cream
¾ cup chopped potato
Salt & pepper powder as per taste
2 cup chopped broccoli
For Garnish:
5 cups water*
½ cup broccoli (chopped & blanched)

Grated cheese


Let’s Begin!


1.  For stock:  Heat butter, add onion, garlic & celery, stir fry few seconds.  Add potato + water & cook till potatoes become soft.  Add broccoli & cook 2 more minutes.  Let cool & then churn in blender to get fine stock.

2.  For Soup:  In a pan, add milk + prepared fine stock & cook till 1 boil.  Add nutmeg powder, oregano, salt & pepper powder, simmer 2-3 minutes.  Finally add cream.  Garnish & serve hot.

Notes:
* You  may use vegetable stock in place of water for a healthier soup, non-vegetarians may add broth.
- Tastes great even without nutmeg powder & oregano (in case you don't have them on hand!)

Recipe: Shakkar Para & Namak Paare

For some of the snacks that go along well with tea, Mathri wins hands down, but Namak Paare and Shakkar Para come quite close.  And what I find the best part about making snacks like namak paare and shakkar paare is that I put the efforts to make them ONCE – and they last for a month – saves so much time!
